The Michelin Guide Thailand 2023 has awarded the MICHELIN Green Star for three restaurants that are environmentally conscious and enable sustainable eating practices: PRU, Jampa, and Haoma.
PRU has been given the Michelin World Conservation Award for three consecutive years.
PRU, written in Thai as พรุ, is a restaurant in Phuket, which was the first restaurant in Thailand to win a Michelin Green Star, the first time this award was announced, and it has continued to maintain this Green Star for three consecutive years.
PRU doesn't just concentrate on flavors made with regional products, yet it is able to uphold the "Grow-Care-Understand" guiding principle of maintaining a harmony between components and flavor. The shop has chosen produce from farmers from all around the area, including Phang Nga, Nakhon Phanom, and "Phru Champa," its organic farm over an area of more than 600 rai (96 hectares, nearly a square kilometer), as sources for raw materials. Dutch chef Jimmy Ophorst oversees every step of the cooking process, as well as elaborately garnishing the dish to impress you with the finest ingredients selected from many sources, including the most famous local seafood, Phuket lobster.
Jampa, a new restaurant in the Phru chain that focuses on zero waste, is also known as Thai Champa, named after the town of Phru Champa. Head Chef Rick Dingen painstakingly crafts contemporary European meals with an eye on the ecology and the preservation of nature in Phuket. Champa adheres to the concept of Zero Waste, which is a way of cooking that tries to make the most of raw materials so as not to leave any bits behind. Haoma is an Indian eatery in Bangkok that refuses to waste food.
This contemporary Indian restaurant, which this year not only got the Sustainability Award but also its first Michelin star, is regarded as a rising star in the culinary business. Haoma means "to the holly tree" in Persian, and they cultivate 40 different varieties of veggies for their personal consumption here in Haoma, Bangkok. In keeping with the restaurant's guiding principle of "We cultivate what we cook, We cook what we love," there is also a system for filtering rainwater to be used for watering vegetables. The restaurant emphasizes environmental responsibility and sustainability. So there are no components left. The restaurant offers seasonal tasting menus, à la carte items, and vegetarian options on its menu. Each meal is perfectly spiced, showcasing the allure of Indian spices when combined with wine and suggested by a knowledgeable sommelier.
