Trang roasted pork is one of the first GI products in Trang that is closely related. It has been registered as a Geographical Indication since 2005. It is a good product of Trang that everyone must not miss tasting. The distinctive feature is crispy skin, golden yellow color, soft aromatic meat, delicious and mellow taste. But if it is made from depraved pork, it will have an additional characteristic, that is, less fat.
The origin of roast pork is said to have first originated in China around 1,000 years ago by a chef who served the imperial family. About 100 years ago, the Chinese people of Guangdong Province immigrated by boat to land at Kantang District or the mouth of the Trang River and settled in Trang Province.
Those Chinese people brought the native Hainan pigs, known by the villagers as Pig Khi Pra, which were brought into boats to raise in Tab Thiang sub-district. It turned out to be very effective. Later, the family tree of Fong Chan shop started making grilled pork for sale for the first time in those days until it became widely known.
Trang roasted pork is also an important food that Chinese Thais in Trang use in events or ceremonies such as weddings, funerals, ordination ceremonies, Cheng Meng festivals, Chinese New Year festivals, etc. It is a symbol of abundance, wealth, and smoothness in work.
The distinction between Trang Roasted Pork and other roast pork is that whereas other roast pork is often grilled in bits on a simple grill, Trang Roasted Pork uses a full roasting procedure that involves a brick stove and rubber wood as the primary fuel. As for the fermentation, many spices are used depending on the recipe of each restaurant.
